Simply The best Pizza Muffins

These pizza muffins are really incredibly easy to make. They are a success at DVD nights, kids parties, or family occasions. They can even be great for school lunches.
When I first offered them to our guests, I was not sure, if these muffins could be a success. Have you ever tried a savoury muffin? It is a surprise for the first moment, isn’t it?
Usually we expect muffins to be sweet. I still remember my husband’s surprised facial expression when he checked his first one out. I haven’t told him that the muffins on the kitchen counter were pizza muffins when he came into the kitchen to simply taste the food I made. I was so busy that I simply forgot to tell him about my latest creation. His look was too good to be true 😉. Fortunately he liked them so that I decided to offer them to a guest we expected in the evening.
In the end they were such a big hit that we offer and enjoy them very often.

- 250 g spelt flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 40 g dried tomatoes
- 50 ml olive oil
- 1 egg middle-sized
- 150 ml butter milk
- 1 tablespoon tomato paste
- to taste Italien herbs I use frozen herbs
- 20 g salami
- 30 g boiled ham
- 2 tablespoons grated cheese.
Ingredients

- Line a muffin pan (I use a 12 cup muffin pan) with muffin paper liners.
- In the meantime cut the salami and the boiled ham to bits and preheat the oven to 180 degrees Celsius upper and lower heat.
- Put the dry ingredients into a 2nd bowl and mix them.
- Crack the egg into a 3rd bowl and whisk it.
- Add the liquid ingredients to it and combine them.
- Transfer the oil, tomatoes and herbs to the liquid ingredients, add these to the dry ingredients and combine them.
